4 sweet potatoes
Feta cheese
Arugula
Pomegranate seeds
Red onion
Salt & pepper to taste
Olive oil
2 avocados
400 g chickpeas
1-2 tbsp olive oil
1 tsp paprika powder
2 tsp cumin
1 teaspoon chili powder
1 tsp garlic powder
Salt to taste
✅Heat the oven to 200 degrees.
✅Cut sweet potatoes lengthwise.
✅Brush with olive oil and bake in the oven for about 30 minutes.
✅Rinse the chickpeas and let the water drain. Mix with olive oil and spices.
✅Roast in a dry pan for a few minutes. Put aside.
✅Mash avocado, season with salt and pepper.
✅Take out sweet potatoes, mash a little with a fork.
✅Fill sweet potatoes with avocado, arugula, feta cheese, red onion and pomegranate. Eat and enjoy
