These gluten-free pancakes are light, tender and full of nutritional value. Perfect for lazy mornings or as a quick snack during the day. Additions:
🍓 Natural or vegetable yogurt
🍓 Fresh strawberries, sliced
🍓 Maple syrup/honey for topping
✅ Mix flour, baking powder and cinnamon in a bowl.
✅ In a separate bowl, combine egg, milk, oil, honey and vanilla.
✅ Add the wet ingredients to the dry ingredients and mix gently - don't mix too long!
✅ Heat a frying pan with a little fat and fry the pancakes over medium heat for about 2 minutes on each side, until golden.
✅ Serve with yogurt and strawberries, and for a sweeter version, top with a little maple syrup.
💡 TIP: If you want fluffier pancakes, you can add 1/2 mashed banana to the batter!
