Gluten Free Pancakes with Yogurt and Strawberries 🍓

Gluten Free Pancakes with Yogurt and Strawberries. I love simple, healthy breakfasts that not only taste good, but are great for your mood! These gluten-free pancakes are light, tender and full of nutritional value. Perfect for lazy mornings or as a quick snack during the day. Served with yogurt and fresh strawberries, they are a real feast for the taste buds. Try them and fall in love with their simplicity! 💛

Przepis

  • 1 cup oat flour (or almond flour)
  •  1 teaspoon of baking powder (gluten-free)
  • 1/2 teaspoon cinnamon (optional)
  • 1 egg (or substitute: flaxseed + water)
  • 3/4 cup of plant milk (e.g. almond milk, coconut milk)
  • 1 tbsp coconut oil or clarified butter
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon vanilla extract (optional)

Additions:

🍓 Natural or vegetable yogurt

🍓 Fresh strawberries, sliced

🍓 Maple syrup/honey for topping

Ingredients

Country cheese with nuts and dried plum

✅ Mix flour, baking powder and cinnamon in a bowl.

✅ In a separate bowl, combine egg, milk, oil, honey and vanilla.

✅ Add the wet ingredients to the dry ingredients and mix gently - don't mix too long!

✅ Heat a frying pan with a little fat and fry the pancakes over medium heat for about 2 minutes on each side, until golden.

✅ Serve with yogurt and strawberries, and for a sweeter version, top with a little maple syrup.

💡 TIP: If you want fluffier pancakes, you can add 1/2 mashed banana to the batter!
