Preheat the oven to 200 degrees.
Cut the potatoes into halves.

Prepare the tahini sauce:
Mix tahini with balsamic dressing and maple syrup. Season with salt and pepper
When the potatoes are ready, mash the flesh with a fork and decorate with chopped nuts, crumbled feta and arugula.
