This recipe is a nutritious and tasty dish that combines healthy brown rice, juicy chicken breast and a mix of crunchy vegetables, all in a flavorful teriyaki sauce. It's the perfect idea for a quick lunch or dinner, full of nutrients and rich flavors. Simple to prepare, yet filling, this meal will provide energy for the whole day.

Due to the high glycemic index (GI) of brown rice and teriyaki sauce, this portion is more suitable for people with a higher level of physical activity who need a quick boost of energy, such as athletes before training or physically active people.

However, for people with diabetes, insulin resistance, or those trying to control their blood sugar levels, such a portion could cause a rapid increase in glucose. For these people, a better solution would be to replace the brown rice with a lower GI option, such as quinoa or wild rice, and limit the amount of teriyaki sauce or choose a version with a lower sugar content.

  • Mixed vegetables for a pan or wok
  • 1 cup brown rice
  • 1 x broccoli
  • 100g chicken breast
  • 5 tablespoons teriyaki sauce
  • 1 tablespoon olive oil

Ingredients

✅Cook the brown rice according to the instructions on the package. Set aside.

✅Divide the broccoli into florets and steam for 5-7 minutes, until al dente.

✅Cut the chicken breast into thin strips. In a heated pan or wok, fry the chicken in a little oil until golden brown.

✅Add the teriyaki sauce to the vegetables and chicken and mix until everything is evenly coated.

✅Put a portion of rice on a plate, add the chicken with vegetables and broccoli. Pour the remaining sauce from the pan over everything. Enjoy!
