Sweet Oatmeal Omelet with Yogurt and Raspberries
Start your day with this delightful and healthy sweet oatmeal omelet. It's light, fluffy, and pairs perfectly with creamy yogurt and tangy raspberries, offering a balanced breakfast rich in protein and fiber.
2 eggs (separated into yolks and whites)
1 tablespoon milk (dairy or plant-based)
2 tablespoons oat flour
A pinch of salt
1 teaspoon butter or oil for frying
Toppings:
2–3 tablespoons natural yogurt
A handful of frozen raspberries
1 tablespoon of your favorite jam or preserves
✅In a bowl, beat the egg whites with a pinch of salt until stiff peaks form.
✅In a separate bowl, mix the egg yolks, milk, and oat flour until smooth. Then gently fold in the beaten egg whites until the mixture is fluffy.
✅Heat a frying pan (preferably with a non-stick coating) and grease it lightly, e.g. with clarified butter. Pour the mixture into the pan and fry on low heat for 2–3 minutes, until the bottom sets. Flip the omelette over and fry for a while longer
