12 mini tortillas
1/2 onion
3 cloves garlic
1 small green pepper
1 small orange pepper
400g extra firm pressed tofu
1/2 cup fire roasted tomatoes (or tomato sauce)
3 tbsp taco seasoning
Handful of cilantro
Juice of 1 lime
1/2 cup raw cashews
1/4 cup water
🥑 Avocado Cilantro Lime Dip
1 avocado
1 jalapeño, deseeded
Handful cilantro
Juice of 1-2 limes
1 clove garlic
1 tsp maple syrup
3-4 tbsp water
✅ Fry the onion until transparent, then add garlic and pepper.
✅ Crumble the tofu and add it to the vegetables along with taco seasoning and roasted tomatoes. 🤙
✅Prepare cashew cream by mixing cashews and water. If you don't have a high speed blender, be sure to soak the cashews!
✅🥄 Mix the cashew cream and add some chopped cilantro and fresh lime juice. 🤗
✅ Add the filling to the mini tortilla and roll it up nicely!
✅Add the rolls to a greased baking tin, grease with a little olive oil and bake at 200°C for 25-30 minutes until golden.
