If you're craving a light, healthy and delicious snack or dessert, strawberry chia pudding will be the perfect choice. Combining chia seeds with vegetable milk and fresh strawberries creates a dish rich in omega-3 acids, fiber and antioxidants. This pudding is easy to prepare and is perfect for both breakfast and dessert. Thanks to the natural sweetness of strawberries, it is also an excellent alternative to sweets with high sugar content.
✅In a bowl, mix chia seeds, almond milk, maple syrup (if using) and vanilla extract. Mix thoroughly so that the chia seeds do not stick together.
✅Place the mixture in the refrigerator for at least 2-3 hours, and preferably overnight. During this time, the chia seeds will absorb the liquid and the pudding will thicken.
✅Before serving, stir the pudding again. If it is too thick, add a little more almond milk to get the desired consistency.
✅In a blender, blend strawberries with lemon juice until you get a smooth consistency.
✅Add the strawberry puree to the chia pudding and stir gently to combine the flavors.
✅Sprinkle with pistachios and coconut shavings.
✅Strawberry chia pudding can be stored in the refrigerator for up to 3-4 days, making it an ideal snack for the week.
